Working on processing everything, thinking and digesting all the sights and sounds and smells and experiences. How to blog all this, especially when my internet time is rare and precious?

I found it helps to journal in bullet points, filling in the details when you have the chance to do so. That way you remember the important stuff, but you don't take up all your precious travel time writing down what has already happened.
